乳制品,即从牛奶中提取的乳制品,包含了一个广泛的食品群体。如今,大多数功能性食品都是由乳制品制成。牛奶是一种主食,通常是由牛或绵羊、山羊等其他动物挤奶所得。然而,食用从燕麦、杏仁或大豆中获得的被认为是牛奶的趋势越来越明显。牛奶是由水、碳水化合物、蛋白质、脂肪、矿物质和维生素组成,牛奶中的主要蛋白质是酪蛋白,乳糖是奶糖。牛奶中含有的营养成分是悬浮液、溶液或乳剂。

乳品工业一般应用一系列技术生产产品:热化、过滤、均质、发酵、巴氏杀菌和凝固。巴氏杀菌是在特定的温度下对牛奶进行一定时间的热处理。它能消灭病原体,提高质量。另一个过程是凝结,通过絮凝、脱脂和凝聚等物理化学过程实现,应用于奶酪的生产。

众多的乳制品,如酸奶、冰激凌、奶酪等,都是消费的对象。由于需求量大,考虑到其原料极易腐烂,如今乳品行业已注重加工。在加工过程中,必须符合法律要求,使产品适合人类食用。为此,要进行感官、物理、化学和细菌学分析。当然,加工后的乳制品还必须具有特有的气味、色香味和品质,使食品具有吸引力。
