12.1.- LEBENSMITTELTECHNIK

Lebensmittel sind chemische Substanzen mit Nährstoffen, die die für Stoffwechselprozesse benötigte Energie liefern. Andere wichtige Bestandteile von Lebensmitteln sind Faserstoffe, natürliche Zusatzstoffe (Antibiotika, Vitamine und Antioxidantien), Stimulanzien (Koffein), Konservierungsmittel (Essig, Salzlake und Zucker), etc.

Seit Jahrhunderten hat der Mensch Brot, Bier und Wein hergestellt oder Fisch durch Einsalzen getrocknet. Der aktuelle Lebensstil lässt die Verbraucher jedoch nach angereicherten, innovativen und leicht zu verzehrenden Lebensmitteln suchen. Auf der anderen Seite sucht die Lebensmittelindustrie Effizienz und Hygiene, Kostenreduktion, Qualität, Lebensmittelsicherheit und die Kommerzialisierung von nährstoffreichen und gesundenLebensmitteln.

Um der Nachfrage gerecht zu werden, werden Lebensmittel Verfahren unterzogen, um ihre Form, Zusammensetzung oder Energiewert zu verändern, mit Behandlungen wie: Kneten, Abtasten, Bestrahlung, Trocknen, Zugabe von Zusatzstoffen wie essbare Beschichtungen, etc. Ebenso werden Lebensmittel durch Substanzen natürlichen Ursprungs (antimikrobielle Mittel, Antioxidantien), Hitze (Blanchieren, Kochen, Pasteurisierung, Sterilisation und Dehydrierung), Kälte (Kühlung oder Gefrieren), durch Aushärten, durch chemische Mittel (Desinfektionsmittel und Fungizide) oder durch mehrere Methoden gleichzeitig konserviert.
